INGREDIENTS for Pizza Dough

3 Cups of All Purpose Flour
-
2 Tbsp. of olive oil
-
1 Tsp. of salt
-
1/2 Tbsp. of sugar
-
1 cup of warm water
-
1 packet of Active Dry Yeast

Pizza INGREDIENTS:

This is the easy part!
You can USE your favorite pizza tomato sauce and toppings!

INSTRUCTIONS:
Pizza Dough
​
1. In a Medium Mixing Bowl Add yeast to WARM water and let it sit for 5 minutes
​
2. Then add salt, sugar, and olive oil to the yeast mixture​, and mix together
​
3. Add small amounts of flour to the wet ingredients at a time, until all flour is mixed into a ball
​
4. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm area for about an hour. The dough should double in size.

INSTRUCTIONS: Vegan Pizza
​
1. Split dough ball into 2 parts, to make 2 thin crust
​
2. Cut the dough in half. Place both pieces on a floured work surface and gently knead. You can roll one piece out now into a 12- inch round.
3. To cook now, top with your favorite toppings. Brush the exposed dough with olive oil and place in a 410 degree oven for 12 to 185 minutes until the dough is golden brown.

INGREDIENTS

1 bunch of Lacinato Kale
-
Olive Oil
-
Garlic Salt
-
Pepper

INSTRUCTIONS
​
Rinse and dry Kale 5- 10 minutes before use.
Pre-heat oven to *350 degrees.
Line your tray with aluminum or parchment paper.
​
Pinch of bite size pieces of Kale of its stem.
Place Kale pieces in tray and lightly drizzle with olive oil.
​
Sprinkle garlic salt and pepper to taste. You can use any other seasonings you might prefer.
​
Bake for 10 minutes. Then they are done!

This is a very yummy meat substitute meal. The tofu grounds are already pre-flavored all you need to do is add a bit of seasoning to the rest of your ingredients. The consistency of the tofu is great and you can crumble them as big or as small as you want.

1 Smart Ground Meatless Crumbles

1 to 2 tbsp. Olive Oil

1 tsp.Garlic Salt

1 tsp. Black Pepper

1 Canned Black Beans
-
1 Cannned Pinto Beans

1 Canned Roasted Corn Kernels
-
Diced 1/2 Yellow, 1/2 Orange 1/2 Green Bell Pepper​

2 Diced Garlic Cloves

1/3 cup of Diced Onion

Burrito Wraps, your choice
INSTRUCTIONS

Prep and dice all of your fresh vegetables. EXCEPT the beans and corn.
​
Then saute the bell peppers, garlic and onions until they are tender in medium heat in Olive Oil. Add Garlic Salt and Pepper to taste
​
I like to Roast them a little to give them that grilled flavor profile but you can choose not to.
​
Rinse and Drain the Canned Corn and Beans.
​
When the sauteed vegetables are ready add the Smart Crumbles, Corn and Beans. Cook until the beans are cooked through and tender.

AND you are done! ready to prep your burritos.

Whole Wheat Pita Bread
Whole Wheat Pita Bread is very delicious. Specially if its Homemade. Want to expand your baking skills with an easy Pita recipe. Well this is it!. All thanks to Food.com where I grabbed this recipe from; so that I could make Pitas for the very 1st time. Those are it the Pitas shown in the Picture.

Knead the dough for about 4 to 5 minutes, or until the dough is smooth and elastic. ( here you can add some herbs and spices if you want to). Don't over-knead the dough.
​
Form as many balls as you can, the object would be 10 if they are all the same size
​
On a floured surface, roll each ball into a 5-6 Inch circle, about 1/4 inch thick.
Be sure to sprinkle a little flour on both sides to prevent sticking)
​
Place them on a non- stick baking sheet and allow them to rise for about 30 minutes, or until slightly raised.
​
Just before you place the pan in the oven make sure to flip the pita over on its other side
​
Bake in the bottom rack of the oven for 5 minutes( the instant hot heat will help them puff up
. When the Pitas come out of the oven they will be hard, but they will soften as they cool.
​
. Store them while they are still warm, in a plastic baggies or an airtight container.
​
Pitas can be reheated in a 350*F oven or the microwave

4 cups of whole wheat flour

1 tablespoon of dry yeast

1 1/4 cups of warm water ( 120-130F degrees)
-
1/2 teaspoon of salt ( this is optional)
INSTRUCTIONS

Preheat oven to 500*F​
​
. Sift together 2 cups of flour and the yeast.
​
Add water and salt and mix well
​
Gradually add in the remaining flour JUST until the dough begins to clean the sides of the bowl. Once this happens STOP adding flour. (so, you might, not use all the flour the recipe call for)

Mexican Style Mashed Potatoes Vegan Tacos... Growing up my mom used to cook these up for us, so I'm really excited I can share this Vegan version. The ingredients are few and the recipe is easy to remember. I hope you enjoy them as much as I do!

6. While the frying pan is heating up, grab about ten tortillas wrap them in a clean kitchen towel and put it in the microwave for a minute. This will soften the tortillas and make them more pliable when being folded

7. With a spoon, scoop about 2 TBSP into the middle of a softened tortilla, Then press together both sides of the tortilla enough to 1. hold both sides together with the potatoes, 2. spread the potatoes on the folded taco 3. But not all the way to the edge, we don't want it to overflow when frying

Now you can place the stuffed taco in the frying pan on its side,turn over to its other side when you see golden brown starting to color the taco side that is pressed down on the frying pan ( You can fry them as little or as much as you want , the goal is to make a crispy exterior). Make sure that both sides of the tortilla do not touch while frying because they will fuse together making it hard to stuff any of the other ingredients.

9. Place paper towels to absorb any extra oil off the taco, as you pull out the tacos from the frying pan
​
10. Once the tacos are done cooking, Now you can stuff the taco with Guacamole Sauce, tomatoes and scallions to your heart's desire.

Mashed Potatoes Vegan Tacos
INGREDIENTS

Regular sized Corn Tortillas
-
Olive Oil
-
Mashed Potatoes ( about 2 tbsp per taco)
-
Diced Roma Tomatoes
-
Diced Scallions
-
Guacamole Sauce

INSTRUCTIONS
​
Before any frying starts make your mashed potatoes. They can come from a box or freshly boil your potatoes and mash by hand. Season them with the seasoning of your choice but I like using Garlic Salt with Parsley.

Also you want to start on your Guacamole Sauce if freshly made, if it's store bought you are all set in this area.

Dice your tomatoes and scallions
Pour Olive Oil In a frying pan, now you can use as little or as much oil you like. I like to start with a thin layer on my frying pan and I add as I go If I'm making more tacos.
​​
Heat the frying pan at a little past medium heat or at a number 6 in my stove. You want to heat the oil but prevent it from burning before you are done frying your taco shells.
