Lentil Soup

Want to make a nutritious soup that is simple and delicious! Try this. It has only but a handful of ingredients but it is dull of flavor. It also a very economic option, all the ingredients you can buy at a very low cost to your wallet! 

INSTRUCTIONS

             With the uncooked Lentils, Remove any shriveled lentils, debris, or rocks. Thoroughly rinse under running water.

             Place the cleaned lentils in saucepan and pour in the water. I like to Pour a 3 cups of water to 1 cup of uncooked lentils. I add water as they cook if I want more broth in my soup.Be sure to use a large enough saucepan as the lentils will double or triple in size.

             Add the garlic and your choice of seasoning if you would like, I use Johnny's Seasoning and Pepper( i don't have exact measurements yet, since i always forget to measure what i sprinkle) I usually sprinkle the salt and pepper a couple of shakes at a time until the broth tastes good to me. [I will add the measurements as soon as I record them ; ) ]

              Bring to a boil, cover tightly, reduce heat and simmer until they are tender. For whole lentils, cook time is typically 15-20 minutes

 

              After the lentils are cooked through, not hard in the center I turn of the stove off and pour in the scallions, tomatoes and avocados. I let it sit for about 5 minutes then I serve.

I am not the greatest cook ; ) but I like to share yummy vegan meals I love. As you go through if you would like to tweak the recipe to your preference go ahead.

For example some like their tomatoes cooked longer, so then you can add them earlier into the recipe.

Lentil Soup

INGREDIENTS

  • 1 cup of Lentils

  • 1/2 cup of diced scallions

  • 2 Roma Tomatoes cubed into small pieces

  • 1 Avocado cubed into small pieces

  • 1 Garlic clove ( cut to your preference) I like to thinly slice them

  • Jonhnny's Seasoning

  • Pepper

Are you looking for new Chili Recipes. Here is a Great One!. This Recipe use Smart Ground Meatless Crumbles from Lightlife Brand. 

INGREDIENTS

  • Carrol Shelby's Chili Kit (You are more than welcome to use you favorite chili sauce)

  • Lighthlife Brand Smart Ground meatless Original Crumbles

  • 4 oz, of sliced mushrooms

  • 1 small diced Roma Tomato

  • 1/2 cup of Diced Onion

  • 1 can of pinto beans

  • Grape Seed Oil ( or Olive Oil)

  • 1/2 cup of water

INSTRUCTIONS

​

             In a large pan add oil and at medium high heat, saute Onions and Mushrooms together.

​

             After the Onions are sauteed to the point of transparency,, add diced tomatoes and pinto beans.

​

             At this point you will be adding water to prevent you veggies from sticking to the pan, as well as setting the base for the chili. You can more add more water if you want more sauce, or want to make it less thick.

​

            Next you will add the Smart Ground Crumbles, stir them in and let them sit for about 3 minutes to heat through

​

            Finally you can add your chili mix ...I only used the Chili Spice Packet and a tsp. of the salt packet​​ ( But you are more than welcome to use your favorite chili mix, or use this chili kit and mix it as you please) AND THEN YOU ARE DONE REMOVE FROM HEAT
