I have "Veganized" my Family's Recipes

This past week I have noticed that I have been inspired by my Mom's cooking growing up. My dad worked at various restaurants as a cook in his younger days and so we had the privilege to experience different styles of food. It hasn't been hard to transform my mom's home cooked meals into a Vegan version. Truly all I had to do was not add the meat part of the recipe.

I have made Vegan Stir Fried Rice, Bean Sprouts Vegan Stir Fry & Mashed Potatoes Vegan Tacos. I can successfully say they have been a hit in our household. My kids love it as well and that is always a BIG plus. These new meals bring a more balanced Vegan Diet Lifestyle, I think. I have nothing against only eating raw foods, or Salads and non Fried foods and meals. It's just that, throwing into the mix some olive oil or grape seed oil fried food makes it all that more enjoyable. Everything is in moderation I must say. We tend to accompany any fried foods with a salad greens to help digestion.

I'm glad that these home cooked meals that I had forgotten about are surfacing again. I can't wait to see what other meals I can remember!
